What school are your children going to? Are they actually going to ISB? Just asking because you may end up living therefore in Watermael-Boitsfort, don't know the stages programmes quite so well over there.
You can look up most stage in French using this website.

Where you book stages might depend upon where you end up living. But 3 big organisations (called ASBL) which provide stages in the eastern/southern communes are :

Our children swim competitively and I can tell you the most successful club with many international swimmers in Brussels is CNSW based at Sportcity in Woluwe St Pierre. You will find smaller clubs at Calypso pool in Watermael-Boitsfort and Poseidon pool in Woluwe St Lambert. During the Summer holidays, the clubs sort of shut down, as the competitive swimmers spend early July abroad at training camps in preparation for the Belgian nationals at the end of July.

Our club CNSW holds half day swim camps in July-August. You will find both Action Sport and Toboggan ASBLs do stages including half day swimming and half day other sports - typical price for swimming / sports full day 8am to 6pm monday to friday would be 100 euro for the week. Action Sport swim stages are at Sportcity in Woluwe St Pierre, Toboggan ones are at Calypso pool in Watermael-Boitsfort, Poseidon in Woluwe St Lambert and Espadon pool in Etterbeek.
There is so much more, too much to write here. If you do stick to the bigger ASBLs like the one mentioned, if your children find they hate their first day at a particular activity, if there is space in another activity, they can usually change for the rest of the week. At Action Sport in particular, your children will probably find some English speakers among the children and also among the instructors, the English speaking community is quite big in the eastern/southern communes of Brussels and English is so often used as a lingua franca for Germans, Finns, Swedes etc who don't speak French but speak English, so communication in English with Action Sport at least is not too difficult. One final thing, Action Sport do stages in conjunction with Kiddy Classes, children do half day language courses and half day sport with Action Sport at Sportcity location - they walk about 200m between the location of language lessons and Sportcity.
