    filled with a delicate orange cream.



    Ingredients

    For the choux pastry

    200ml/7fl oz cold water

    4 tsp caster sugar

    85g/3oz unsalted butter, plus extra for greasing

    115g/4oz plain flour

    pinch salt

    3 medium free-range eggs, beaten

    For the cream filling

    600ml/1 pint double cream

    1 orange, zest only

    For the chocolate sauce

    100ml/3½fl oz water

    80g/3oz caster sugar

    200g/7oz good-quality dark chocolate, broken into pieces



    Preparation method

    1.Preheat the oven to 200C/400F/Gas 6. Place a small roasting tin in the

    bottom of the oven to heat.

    2.For the choux pastry, place the water, sugar and butter into a large

    saucepan. Heat gently until the butter has melted.

    3.Turn up the heat, then quickly pour in the flour and salt all in one

    go.

    4.Remove from the heat and beat the mixture vigorously until a smooth paste

    KD Fish et Chips is a family run business operating in the lower Languedoc

    Roussillon region.



    We prepare and cook in a traditional way which means all of our fish is

    sourced from Icelandic waters and is freshly filleted and cooked to order in a

    crispy beer batter. Our chips are all fresh home cut from English Maris Piper

    potatoes, we do not use frozen chips or French fries.



    We have a fully equipped van incorporating professional standard gas fryers

    which should ensure that waiting time is kept to a minimum.

    Anyway, here is one i found for Raspberry+Cream cupcakes. As you may have

    noticed over the months, i have a bit of a sweet tooth. Enjoy



    Ingredients

    For the cupcakes

    180g/6oz butter, softened

    180g/6oz caster sugar

    180g/6oz plain flour

    1 heaped tsp baking powder

    3-4 tbsp milk

    2 free-range eggs

    150g/5oz raspberries



    For the icing

    125g/4oz butter, softened

    250g/8oz icing sugar

    1 tbsp milk

    small drop red food colouring

    12 raspberries



    Preparation method

    1.Preheat the oven to 180C/350F/Gas 4. Line a 12-hole muffin tin with paper

    Used our Raclette grill last night. It was a lovely meal and great to show our

    friend who is visiting from the UK.

    Here's what we did:

    On the top of the grill, we sprinkled some freshly cracked pepper and sea

    salt. Some sausage, pork and chicken was thinly sliced so as to cook evenly and

    quickly.

    We started putting the meat on top of the grill which was already hot.

    Underneath, where you see the little handles, are these little spatula-ish

    things. You put a piece of cheese (raclette) onto this and place it underneath

    the grill where it melts. Once it melts, you pull out your handle and the cheese

    slides right off. We also put some green beans in a salsa underneath and grilled

    peppers and onions on the top.There were boiled potatoes and cous cous. There

    was a fresh, crusty baguette. Then, you take the melted cheese and put it on top

    of your potatoes, bread, and/or your meat. It was delicious but probably not

    that slimming!

    bamboo skewers to cook on the barbecue.



    Ingredients

    450g/1lb boneless, skinless chicken breasts, cut into 2.5cm/1in cubes

    1½ tbsp groundnut (peanut) oil



    For the marinade

    3 tbsp light soy sauce

    1 tbsp Shaoxing rice wine or dry sherry

    salt

    freshly ground black pepper

    2 tsp cornflour



    For the sauce

    3 tbsp sesame paste or smooth peanut butter

    1 tbsp chilli bean sauce (available from Asian grocers)

    1 tbsp coarsely chopped garlic

    2 tsp chilli oil

    2 tbsp Chinese white rice vinegar or cider vinegar

    2 tbsp light soy sauce

    salt

    freshly ground pepper

    2 tsp sugar

    2 tbsp hot water

    To serve

    50g/2oz thinly sliced onions

    100g/4oz thinly sliced cucumbers



    Serves-2-4

    1.In a medium-sized bowl, combine the marinade ingredients, stirring to

    What made you move to France and how long have you lived here?

    I have lived here for 4 years. I moved here with my Mum after I had finished University in the UK. We had always holidayed in Southern France throughout my childhood. My late Dad had always dreamed of retiring here and sadly he never got to live out that wish, but we decided to grab the bull by the horns and move out here.





    Which part of France do you live in, and what's it like to live there?

    We live just 15 minutes outside of Carcassonne in the Languedoc Roussillon. It's a lovely area with so many villages to visit including Montolieu, Saissac, Revel, the list is endless...



    Carcassonne is a great town to live near. Whether you want to go for a relaxing drink or meal in the main square or go for a walk around the medieval city, there is something for everyone!

    I would love a fireplace surround in my lounge. It would be perfect as I have a space directly in front of the area where all of the sofas are facing. So it could be a great focal point of the room. I always think it's important to make sure that the tv doesn't become the main focus of a lounge. I would love a wood burning stove but that's a future dream..
