Yeah, Spain is a good idea! And backpacking is even better. =) I would advice to head for the Sierra Nevada National Park, it is great for hiking!

No problem. I have bought backpackers travel insurance policy and added extra cover for my laptop and camera. However, to add cover for my electronics I bought comprehensive policy. It is not expensive and it fit me. You can check by yourself and compare different deals on this site. Good luck with that and have a great trip!=)
By the way, now I would also love to go to Nevada National Park:)
